Breakfast: Our new home cure is ready.  Back bacon & Streaky. The cure is made of Salt, a very little sugar, a sprinkle of Italian Salt for Meats (rosemary/fennel/oregano), Prague Powder No. 1, and a good sprinkle of ground black pepper.  It was very good, if not perfect.  I think it will be our 'house' cure

Lunch: Shop bought scotch eggs

Dinner: Burrata & Tomatoes, Garlic Flatbread. Pizza.  We had a lovely visit from our friend Ingrid and had Pizza in the garden.  I took the opportunity of cooking my own pizza in the Monolith and the other 2 were cooked in the Ooni 3



Ooni wins hands down!  The Monolith version was cooked with the stone at 370c and a good draw on the coals to give some top heat - but by the time the top was getting brown the pizza base became very tough.  I will do some research and try again, but glad we have the Ooni

I cook on the Ooni with Oak chunks and charcoal which I prefer to wood pellets.  The other 2 pizzas turned out well  ( Passata / green pepper / onion / mushroom / gorgonzola / mozzarella )

Dessert: Honey Ice Cream, made with Essex Honey

Appetiser: Braised Fennel, Cod and Dill Oil Lunch: Roast Leg of Lamb, Hasselback Potatoes, Cavallo Nero, Pan-Fried Garlic Brussel Sprouts Dessert: Apple, Ginger Pudding with Caramel Sauce, Stem & Crystalised Ginger Ice Cream Sunday Lunch with a nice visit from Alan & Sue.  We have been working on some of these dishes and so you will see that with different guests,  we serve the same or similar menu Leg of Lamb was from Swiss Farm, great value at £18 for a good sized leg.  Roasted in the Monolith, basted with Rosemary & Garlic Oil.  Served pink. Hasselback went perfectly again.
