Day 96-46 : Saturday 28th June, 2020

Breakfast: Hot Smoked Salmon Flakes, Scrambled Egg Toast Dinner: Pork Nachos A quiet day food wise for us.  We had a busy day yesterday and a lazy start to the day Nachos Flaked Salmon & Scrambled Egg Dinner: The loin of pork, sliced and in the freezer comes in useful for a quick dinner.  Defrosts very quickly.  I have added a photograph of a serving of the Nachos, but I dont seem to be able to do it justice The nachos is assembled very quickly and into the oven Planning some menus for next week with family and friends also Just a general note on our visit to the supermarket today.  There is that feeling that lockdown is over.  Of course, there are still queues, and people are socially distanced and aware, but not quite as conscious. 

Day 79-29 : Wednesday 10th June, 2020

Breakfast: Smoked Salmon, Scrambled Egg & Pumpernickel Toast Lunch: Ham & Cheese Toastie Dinner: Sausages, Mash, Peas & Cabbage, Onion Gravy Breakfast:  I have found a recipe for The Cheesecake Factory Brown Bread  recipe which I intend to try Smoked Salmon, Scrambled Egg Lunch: The weather is distinctly colder again, and wet.  I saw a tip some time ago on how to improve on a Toasted Sandwich.  Impossible I hear you say.  Well give it a try, I suppose it is more of a 'Grilled Sandwich' which is the American term. Toasted Cheese & Ham Sandwich Spread 2 slices of bread thinly with mayonnaise Gently heat a non-stick saute (frying) pan and place the first slice mayo side down Add your filling  in this instance a little cheese, ham, tomato and a little mustard (a very little mustard enhances cheddar), and a little more cheese Place the 2nd slice of bread on top and firmly press down Keep the heat low to crisp the bread and mel...

Day 36 : Tuesday 28th April, 2020

Breakfast: Scrambled Egg on Toast / Bacon Sandwich Lunch: Scotch Egg, Hummus, Bean Salad Dinner: Lambs Liver, Bacon, Onions, Cabbage & Mash Breakfast: I had planned Smoked Salmon & Scrambled Egg, but forgot to get the Salmon from the freezer Lambs Liver, Bacon & Onion Scrambled Egg Lunch: We are will into this batch of scotch egg, and using up some other things from the fridge Scotch Egg Dinner: I wonder how many people will say "YUK! Liver".  We love it, the weather has turned a little chilly so something hearty.  We prefer Lambs Liver for this dish, and would never use Pigs.  A little tip, if you think that liver is just too 'livery' then trim it, and soak it in milk for a few hours.  Toss the liver in seasoned flour, fry quickly and serve just a little pink and it will turn out very tender. The other benefit of Lambs Liver is the cost.  It is £1.25 for 500g. Which would serve 3 people with ease
