Day 8 : Tuesday 31st March, 2020

Breakfast: Mushrooms on Toast (Morrisons Honey & Sunflower Seed) Lunch: Salami, Cheese, Peppers Dinner: Bouef Bourguignon , Cheesy Mash, Buttered French Beans & Carrots Mushrooms on Toast Salami & Cheese Dinner:  Maggie adapts a recipe by Lorraine Pascale. It usually has Red Wine and Marsala added to the stock, which does make it a little sweeter, but this version was made only with Red Wine Bouef Bourguignon & Cheesy Mash

Day 7 : Monday 30th March, 2020

Breakfast : Muesli / Cornflakes Lunch : Pate, Coleslaw Dinner : Aromatic Duck with Lettuce Leaves, Curly Kale 'Seaweed', Stir Fry Chinese at Home Dinner : Gressingham heat in the oven half duck.  We have tried others and find Tesco or Lidl are aromatic, others are a bit bland. It is a good substitute for the real thing.  We prefer the freshness of using lettuce leaves instead of pancakes Seaweed Kale is just so simple. Remove the stalks and coat lightly in a little olive oil Sprinkle with a good pinch of salt and Chinese Five Spice Sprinkle with a little sugar (this can be sugar free with Splenda or Stevia etc) Bake for 5 minutes at 180c toss and bake for another 2 or 3 minutes until crisp

Day 6 : Sunday 29th March, 2020

Breakfast : Boiled egg, toast soldiers Lunch : Albacore Tuna, Chopped Salad Dinner : Roast Chick, Roast Potato/Parsnip/Butternut Squash/Celeriac, Brussel Sprouts, Yorkshire Pudding Tuna Chopped Salad Lunch : The tuna salad was a Roast Chicken & everything use up of the Salad Nicoise earlier in the week Dinner : Who doesn't love a roast.  Not Sunday without a roast, says Maggie

Day 5 : Saturday 28th March, 2020

Breakfast:  Bacon, Black Pudding, Egg, Mushroom Lunch:  Pate, Cheese, Coleslaw Dinner:  Rib Eye Steak / Lamb Cutlets, Onion Rings, Garlic Mushrooms, Baked Potato English Breakfast Steak & Lamb on the BBQ It is good to get the bbq fired up again for real bbw style. Although we do use it year round

Day 4 : Friday 27th March, 2020

Omelette Arnold Bennett Breakfast : Muesli / Cornflakes Lunch : Omelette Arnold Bennett Dinner : Chip Sandwich / Cheese on Toast Museli & Cornflakes Chip Buttie Lunch : A late affair today, after a shopping trip for essentials. We had to join a queue for about an hour (see below).  The omelette was a use up of the smoked haddock from yesterday.  Check online for the recipe, basically, it is haddock poached in cream and milk, made into a sauce with egg yolk, added to whipped egg white, which is then added to an omelette and sprinkled with cheese Dinner : The omelette was eaten late enough to only need a light supper. Day 3 : Thursday 26th March, 2020

Breakfast : Home cured Bacon Sandwich Lunch :  Brocolli & Stilton Soup Dinner :  Hot Smoked Haddock, Creamed Cabbage Apple & Bacon, Fishcake Brocolli & Stilton Soup   Smoking Haddock Cabbage, Apple & Bacon Breakfast : We bought a Bacon Curing Kit from Ocado ( Ross & Ross ) when it was on offer (£11.50 - with enough kit to make 6 x 500g bacon joints - from which I cut 20 slices). The whole belly (2.2kilos) cost £15.00 from Swiss Farm.  It proved very successful, although I would butcher the belly to get better-formed bacon.   I also intend to try with a loin of pork to make back bacon, try curing salts instead of using a kit, and to try different meats to make Bresaola and other salumi Lunch : Was a use up of the broccoli and stalks from the previous day Dinner: We have been cooking Hot Smoked Salmon for a while now.  We spotted the fresh haddock on offer at Morrisons and decided to try the same pro...

Day 2 : Wednesday 25th March 2020

Breakfast :  Boiled Egg / Toast Lunch :  Salad Nicoise Dinner :  Pork Escalope Milanese, Sweet Potato Fries, Roasted Brocolli in garlic and chilli vinaigrette  Pork Escalope Milanese Lunch:   The idea for Salad Nicoise for lunch came from  left-over beans from dinner the previous evening   Half a jar of Albacore Tuna or your preferred (brined or oiled)   Green Beans - blanched and cooled   Boiled Egg - hard   Salad Leaves / Cucumber / Tomato / Onion   Vinaigrette Dinner : We buy a loin of pork for £10 from Swiss Farm, Ashbocking . Day 1 : 24th March 2020

Breakfast : Cereal / Muesli / Coffee Lunch : Grilled Cheese & Corned Beef Sandwich (aka Toasties) Dinner : Grilled Fresh Mackerel,  Garlic & Lemon Marinade / Saute Potatoes / Garlic French Beans Grilled Mackerel Garlic & Lemon Marinade Lunch : An occasional toastie is essential (a bit like pizza!). We spread the outside slices of the bread with mayonnaise and then gently fry. Sounds strange but makes life easier and tastier Dinner : We had visited Morrisons on the 23rd March and the fish counter was very well stocked... 4 x Mackerel Fillets for £4.50 Make the marinade like a vinaigrette and marinade for about 30 minutes Grill or bbq (start with the skin side down) for about 4 minutes - turn over gently - cook for another 2 minutes - serve
